Spicy Black Bean Dip

I have officially purchased the best cookbook around! It’s called Clean Start by Terry Walters and I’m already obsessed. So happy that I found this book and must admit I have quickly become obsessed with this women and her healthy outlook on eating and living well.

Cooking is very therapeutic for me and I love reading these recipes and then creating these healthy dishes with fresh ingredients. Usually, I change it up a little to fit my own personal tastes.

Anything that calls for garlic, is quickly doubled when I make it! Beware friends, family, and vampires.

For a fun treat, I’m going to routinely create one recipe in this cookbook, then post the delicious pictures and tips for each recipe!

This week, I made the Spicy Black Bean Dip. Can I say yummmmm?!

The one thing I did learn was that black beans are unfortunately not very photogenic. But trust me, it was delicious! It’s a great alternative to other fatty dips. It still tastes like a naughty treat but is much better than spinach artichoke dip, chunky queso, etc. Would highly recommend bringing to a barbecue or grill party! It would pair great with these Chicken Tacos.

The one less than pleasant consequence to making this was a strange burning tingle inbetween my fingers! I added in some jalapeños to the recipe and the oils must have soaked into my fingers. Ouchy! Oh well, the taste was well worth it 🙂

Skinny Margarita Patio Time

Who doesn’t love a good margarita? No one. But it always is a little discouraging when you order one knowing that you are consuming about 500 or more calories in a single drink. Not to mention how overly sweet some can be! It’s easy to enjoy for a bit, but then leaves you questioning if it was worth that many empty calories. Therefore, I usually go with a glass of wine or vodka water instead, but then I am missing out on one of the funnest most Summery drinks ever! Some days, you just need a margarita. Am I right??

So I came up with a great solution! Get ready for the best margarita, not too much effort, and few calories! 130 each to be exact. There are also only 5 ingredients and it’s definitely much cheaper. Ideal! It has the perfect amount of sweetness and tartness.

Ingredients (Per Serving)
1.5 Ounces Fresh Orange Juice
1.5 Ounces Fresh Lime Juice
1 Tsp Agave Nectar
2 Ounces Silver Tequila
Salt to rim glass

Squeeze the oranges and limes. The fruit press worked really well! But squeezing them will work too if you are found in a tough situation without a presser.

What time is it? Margarita time!

Add tequila and nectar. Shake. Shake. Shake.

Always enjoy on a patio!

Mexican Fiesta – 20 Minute Chicken Tacos

This weekend I made some yummy chicken tacos for my roomies. I had been perusing some recipes and knew that I wanted something packed with a lot of flavor and spicy. Have I mentioned how much I adore spicy?? My tolerance level for spicy foods is pretty impressive. Anyway, it is a pretty quick meal and tastes amazing.

Add garlic & onion to any meal and I have a happy stomach. I always burn my onions slightly to add more flavor, stolen trick from my mother’s delicious cooking. So thankful that I had such a great example of cooking quick and delicious healthy meals when I was growing up. My mother cooks every single meal for my dad and her every single night. If that’s not impressive and inspiring I don’t know what is!

Such a better price and such a better bod when you choose to cook your own food. This meal requires about 2 tsps of olive oil versus about 2 tbsp of butter that I would have consumed if I would have gone to a Mexican restaurant. Plus, I didn’t gorge on chips. Always guilty leaving Mexican restaurants, not to mention uncomfortable! OYE!

Ingredients:

2 Chicken Breasts
1/2 White Onion
Sliced Garlic (about 2 tsp)
1/2 Green Pepper
Cabbage
1/2 cup cilantro
1 Avocado
Tortillas
Black Beans
Salsa
Chili Pepper
Salt
Cumin

In 20 Quick Minutes…
Throw in your chicken to a pan and cook. Chop up your onion, pepper, garlic, cabbage while chicken is cooking. Toss in the onions to brown first, then garlic and peppers. Put your beans on the stove to heat. Add spices on chicken and veggies. Microwave a tortilla, if you feel the need to be fancy you can heat on the stove. Voila! Grab a plate! Put meat and veggies in tortilla, spoon black beans on top. Next comes the colorful cabbage and avocados on top. Salsa to the side. For the total time of 20 minutes.

Purple cabbage is a great way to add some color into your meal

She who Dreams of Chocolate

Desserts,mainly chocolate, have always been my biggest weakness. If it weren’t for sweets I would be sporting the most incredible body right now.

I have been having way too many sweets lately…cookies, muffins, candy, etc. Needless to say, I started feeling gross and realized it was that time again to force myself to not have any desserts for two weeks. This is a huge deal for me. Refer to paragraph above, sweets are my weakness. I don’t believe in completely depriving yourself though. Deprivation typically leads to someone being worse off than before! Before starting the dreaded weeks, I knew I had to create some yummy alternatives so I wouldn’t drool watching York commercials.

My Cinnamon Chocolate Ice Cream…very yummy and easy to make. It almost tastes like the real deal to me!

Ingredients:
Frozen Banana
1 C Almond Milk
1 Tsp Honey
1 Tsp Cinnamon
1/2 Tsp Vanilla
2 Tbsp Unsweetened Cocoa
10ish Cinnamon Almonds
1/2 Tbsp of Almond Butter

I just love cocoa!

Blend it all up..it’s quite noisy

Voila!

Some other treats I have to ward off the sweets cravings…

  • Red wine, of course! 🙂
  • Frozen grapes
  • Yogurt with almonds on top
  • Whole wheat toast with PB and honey
  • Oatmeal with some cocoa

Kitchen Full of Goodness and Quinoa Stuffed Cucumbers

After a long day I decided that it would do me some good to spend some time in the kitchen. After all, we all know that cooking, baking, and wine can drastically improve any stressful day. Therefore, I set out to make some Quinoa Stuffed Cucumbers. For dessert, a healthier version of Reese’s peanut butter cup. Plus my cheap, but delightful, Turning Leaf Merlot for all courses.

Quinoa Stuffed Cucumbers

Ingredients:
1 Cucumber
1/2 C Quinoa
1/2 Tomato
1/2 Green Pepper
Salt & Pepper
Sprinkle of Parmesan
1 Tsp Olive Oil

Step 1: Cut up the veggies and put aside to fill cucumber. Step 2: Scoop out cucumber’s insides.
Step 3: Sprinkle salt/ pepper/oil in the inside.
Step 3: Cook the quinoa.
Step 4: Put quinoa/veggies into hollowed cucumber.
Step 5: Sprinkle parmesan on top.
Step 6: Put into oven at 200 for 50 minutes…Eat!

It was a delicious dinner I enjoyed while guiltily watching the Bachelor with my roomie. The show is such a guilty pleasure and I would definitely recommend a glass of wine while watching it. The best part of the show is being able to see what they do for their outrageous dates. The past episode was not very impressive though. Jumping off cliffs and soccer…yuck. First, I would never jump off a cliff if a man I just met asked me. Also, in what way does that prove that you trust him completely? If anything went wrong and you died it wouldn’t have anything to do with trust, just an awful accident. Second, I would never play sports with girls that are so vicious and clearly trying to win. Not playing soccer doesn’t mean you’re a bad sport it means you don’t want to play soccer.

After dinner and some laughs at the Bachelor, I made some delicious treats, Almond Butter Cups, from a blog I love! It tasted so heavenly and was fairly healthy..ish. Probably healthier if you don’t eat 3 of them.

Any day ends well with chocolate…
